Easy creamy broccoli soup recipe, containing incredible hormone balancing foods to assist your body in healing the endocrine system.

- 8 cups fresh broccoli florets, washed
- 2 large brown onions
- 3 large cloves garlic crushed
- 1 cup shredded cabbage
- 1 large carrot diced
- olive oil (or your choice of cooking oil)
- 4 heaped tbsp vegetable stock powder
- 1.5 liters water
- 1 cup hemp hearts
- 1 cup water
- ½ cup fresh parsley
- 1 heaped tbsp Chaga mushroom powder (optional)
- ¼ cup pecan nuts (or any other nut) for garnishing (optional)
Makes enough for 8 servings, however, it freezes very well!
Method to make creamy broccoli soup:
- Place the cup of hemp hearts in a bowl with the cup of water to allow to soak.
- In a deep saucepan, add 3 tbsp olive oil and the sliced onion. Keep tossing gently until they are translucent.
- Add the crushed garlic, diced carrots & shredded cabbage & brown for another 10min.
- Pour in the 1.5 liters water & 4 Tbsp stock powder & bring to a boil.
- As soon as it is boiling, add the 8 cups of fresh broccoli florets, and stir-fry until they turn a bright green.
- As soon as the broccoli turns bright green, TAKE IT OFF THE HEAT & place to the side to cool for a bit.
- Once cool, add the soaked hemp hearts, chaga mushroom powder & parsley.
- Pour the soup into a high-speed blender& blend until super soft & creamy.
Taste test halfway through to see if you need to add more salt or pepper (or even more stock powder…..all depends on your taste preference).
Either, place in containers and freeze or heat up & enjoy as is or with your favorite crusty bread (gluten-free, high protein, whole wheat, sourdough, whichever suits you).
- Lightly toast the pecan nuts until roasted and sprinkle on top with an extra swirl of nut milk to serve.
