Ingredients for the GREEN GODDESS WRAP
🌱 1 cup shredded white cabbage
🌱 4 radishes thinly sliced
🌱 1/2 medium cucumber cut into thin long strips
🌱 2 heads Romain (or cos) lettuce
🌱 1 medium beetroot grated
For the Bean Balls (optional, can be excluded or replaced with your choice of protein).
🥙 1 tin black beans drained
🥙 1/4 cup hemp hearts
🥙 1/2 cup fresh parsley
🥙 2Tbsp hemp powder
🥙 1Tbsp chia seeds
🥙 1tsp coriander spice
🥙 1tsp cumin spice
🥙 Sea salt & fresh black pepper for seasoning
ALTERNATIVELY: just use pre-made falafels
For the spread
🌶 3/4 cup hemp hearts
🌶 1/3 cup water
🌶 1 clove garlic
🌶 1/4 cup olive oil (optional)
🌶 1/4 cup apple cider vinegar OR lemon juice
🌶 1 heaped tsp paprika spice
🌶 1/2 red pepper
🌶 1/2 yellow pepper
🌶 Sea salt & fresh black pepper for seasoning
6 large wraps (your choice of wraps…..whole meal, gluten-free, carb-free, plant-based)
We enjoy using a spinach gluten-free option.
Method
- Place the 3/4 cup hemp hearts (for the spread) with the 1/3 cup water & let it stand while you prep the rest of the ingredients.
For the Bean Balls:
- Place all the ingredients in a food processor until well mixed but not too smooth. Taste test to see if it is seasoned enough.
- Roll out into tiny balls & place in a hot nonstick pan (can use a little coconut or olive oil) & crisp them up for a couple of minutes on each side)
For the pepper spread
- Place all the ingredients into a blender (including the soaked hemp hearts) & blend until smooth & creamy.
Assembling your wraps
- Heat up your wraps according to the instructions of the packet.
- Spread a good 2Tbsp of Red Pepper spread on the base.
- Layer a little of each of the fresh ingredients down the center of the wrap.
- place about 4 Bean Balls down the center (depending on how large you rolled them).
- Fold up your wrap & you are done!
