high protein vegan Banana Bread Ingredients
(PLEASE NOTE: all ingredients can be replaced & swapped out with something that might suit you best).
➡️ 3 ripe bananas, mashed
➡️ 1 cup plant-based milk (such as almond, soy, or oat milk)
➡️ 1 Tbsp coconut oil
➡️ 1/2 cup unsweetened applesauce or date paste
➡️ 2 tbsp chia seeds
➡️ 2 cups oat flour (grind oats in a blender until super fine = oat flour)
➡️ 1/2 cup BAOBANANA protein powder (optional for extra protein boost)
➡️ 1 teaspoon baking soda
➡️ 1 1/2 teaspoon baking powder
➡️ 1/2 teaspoon ground cinnamon (optional)
➡️ 1/4 teaspoon salt
➡️ 1/2 cup Chopped peacan nuts (optional, for added texture)

Method

Preheat your oven to 350°F (175°C). Grease or line a standard loaf pan with parchment paper.

In a mixing bowl, mash the ripe bananas until fairly smooth.

Add the plant-based milk, oil, chia seeds, and unsweetened applesauce to the mashed bananas. Mix well until the wet ingredients are thoroughly combined. Allow to stand for 5 min.

In a separate bowl, mix together the oat flour, BAOBANANA Protein Mix, baking soda, baking powder, ground cinnamon (if using), and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined into a thick batter. If desired, fold in chopped nuts or seeds.
- If the batter is a little dry, add more plant milk…and if it seems a little too wet, add an extra tablespoon or 2 of oat flour

Pour the batter into the prepared loaf pan and smooth the top with a spatula (add sliced banana on top if you like).

Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.

Once completely cooled, slice and enjoy your healthy high protein vegan banana bread!
