Ingredients: Chocolate dates with almonds

  • 8 – 10 Medjool dates (or more if you want)
  • 8 – 10 almonds (or any other nut you like, brazil nuts are divine!!)
  • 1/4 cup hemp hearts
  • 1/4 cup cacao nibs
  • 1/4 cup cacao powder
  • 1/4 cup coconut oil
  • 2 tsp raw honey (or any other sweetener that suits you)

OR

 

  • Instead of the cacao powder, coconut oil & sweetener, use 100g of your favourite dark chocolate

method: Chocolate dates with almonds

STEP 1:

Place the coconut oil/butter, cacao powder & sweetener over a double boiler on a LOW HEAT and allow to all melt together (DO NOT LET IT BOIL)

STEP 2:

Slit the Medjool dates down the one side & remove the pit. Replace with a nut (almond, brazil, pecan….your choice).

Squeeze the slit closed.

STEP 3:

Add the Hemp Hearts to the melted coconut oil mixture & fold gently until mixed

Step 4:

Place the Medjool dates on a baking tray with a sheet of wax paper at the bottom (prevents sticking)

Pour 1 -2 Tbsp of the coconut oil mixture over the dates

STEP 5:

Place the dates into the fridge until they are set. Store in an airtight container in the freezer for up to 2 months (not that they last that long ;).
