Chia Pudding recipe 1: Layered Delight
Ingredients
- 3 tbsp Chia seeds
- 100ml Vegan milk (coconut used here)
- 1 large fresh banana
- ¾ cup frozen strawberries
METHOD
- Soak 3 tbsp chia seeds in 100ml coconut milk (or any other milk of choice) with 50ml water. I often do it the night before.
- Blend 1 banana, ¾ cup frozen strawberries & 100ml water.
- Once the chia seeds are set, pour into the serving jar, then pour the berry smoothie on top & finish off with a crunchy topping like gluten-free granola.
- Any other fruit can be used instead of strawberries to get a beautiful colour effect.
Chia Pudding recipe 2: PURPLE ACAI POWER
Ingredients
- 1/4 cup Chia seeds
- 1 tsp Coconut sugar/agave nectar or any other choice of sweetener
- 1 large frozen banana (or 1 cup frozen pineapple)
- 1/2 cup Vegan milk (coconut used here)
- 1 Tbsp Acai berry Powder (available here)
- Fresh berries (optional)
METHOD
- Soak ¼ cup chia seeds in ¾ cup water & 1 tsp coconut nectar/syrup (or your choice of sweetness). Either do it the night before or leave until they are swollen & absorbed all the water.
- Blend 1 large frozen banana (or 1 cup frozen pineapple will do) with ½ cup vegan milk & 1 heaped tbsp Acai powder until smooth.
- Gently fold in the soaked chia with the Acai berry mix, pour into a serving jar & top with a few fresh berries
Chia Pudding recipe 3: Layered Strawberry Compote
Ingredients
- Chia seeds
- 1/4 cup Vegan milk (coconut used here)
- Coconut sugar/agave nectar or any other choice of sweetener
- ¾ cup Coconut cream
- 1 tbsp fresh lemon juice
- ¾ cup frozen strawberries
- Nuts of choice for sprinkles (walnuts used here)
METHOD
- Soak ¼ cup chia seeds in ½ cup water, ¼ cup vegan milk & 1 tsp coconut nectar/syrup (or your choice of sweetness). Either do it the night before or leave until they are swollen & absorbed all the water.
- Mix 1 tbsp fresh lemon juice with ¾ cup coconut cream and allow to curdle to form “yogurt”.
- Place 3/4 cup frozen strawberries with ¼ cup nectar (or any sugar or syrup of choice) in a small pot on low heat and allow to simmer until blended together. This can be done the day before & can be made in bulk and stored in the bridge or even frozen. It really shouldn’t take more than 5min of simmering, your not making jam 😉 If it seems a little thick add some water, 1 tbsp at a time.
- Spoon in the different layers, (chia, coconut flour, berry compote & sliced banana) until it fills the jar & enjoy!!!
- Top with walnuts or your nut of choice.
Chia Pudding recipe 4: Caribbean Spice
Ingredients
- 1/4 cup Chia seeds
- 1/2 cup Vegan milk (coconut used here)
- 3 Tbsp desiccated coconut
- ½ tsp cinnamon
- ½ tsp nutmeg
- Coconut sugar/agave nectar or any other choice of sweetener
- 1 cup fresh mango
METHOD
- Soak ¼ cup chia seeds in ½ cup water, ½ cup vegan milk, 3 tbsp desiccated coconut & 1 tbsp coconut nectar/syrup (or your choice of sweetness). Add ½ tsp cinnamon & nutmeg. Either do it the night before or leave until they are swollen & absorbed all the water.
- Dice up 1 fresh mango (about ¾ cup worth). Can’t find a mango, use fresh pineapple!
- Spoon the chia mix into a serving jar, top with the diced mango & if you feel brave, add a sprinkle of fresh green chili for a little kick (will energize you the WHOLE day!!!)
Chia Pudding recipe 5: Creamy Caramel
Ingredients
- Chia seeds
- 1/2 cup Vegan milk (coconut used here)
- 1 heaped Tbsp maca powder
- 1 heaped Tbsp Nut-butter of choice
- 100ml Coconut cream (or coconut creamer can be used, available here)
- 1 tsp Coconut sugar/agave nectar or any other choice of sweetener
- 1 fresh banana
- Nuts or gluten-free granola for a crunchy sprinkle
METHOD
- Soak 2 tbsp chia seeds in ½ cup vegan milk. Either do it the night before or leave until they are swollen & absorbed all the water.
- Blend together 1 banana, 1 heaped Tbsp maca powder, 1 heaped Tbsp nut butter, 100ml coconut cream, and 1 tsp nectar (your choice of sweetener).
- Once the chia seeds have swollen, gently fold them into your “caramel cream” & top off with fresh banana slices and your choice of crunch (nuts or granola).
